Cauliflower Crust Pizza

A clever recipe for pizza with a healthier base made from cauliflower, making it a great way to sneak in extra vegetables.

Cauliflower Crust Pizza

Ingredients

  • 2 heads cauliflower (about 2¼lb-2¾lb (1kg-1.2kg))
  • 2 large eggs
  • 7 oz mozzarella or cheddar cheese (grated)
  • 4 tbsp tomato purée
  • 2 tsp dried mixed herbs
  • 4.4 oz ball buffalo mozzarella ((125g))
  • 1 red onion (finely sliced)
  • 7 oz roasted red peppers ((200g))
  • 1 handful Basil leaves (to serve)

Instructions

  1. Preheat oven to 390°F (200°C) or 355°F (180°C fan), mark 6. Cut the cauliflower into small florets and blitz in a food processor, in batches if necessary, until it resembles breadcrumbs (be careful not to purée it!). Put it in a microwaveable bowl and blast on medium for 5-6min until soft. Alternatively, boil the cauliflower florets, then chop finely once cooked.
  2. Transfer the cauliflower to a large bowl and stir in the eggs, grated cheese and plenty of seasoning.
