Chicken BLT Burgers with Blue Cheese

Ingredients

  • 1 1/2 lb chicken thigh fillets (roughly chopped, then pulsed in a food processor until it resembles mince)
  • 2 tbsp chives (finely chopped)
  • 1 1/2 tbsp wholegrain mustard
  • 1 tbsp runny honey
  • 2 oz fresh white breadcrumbs
  • 1 medium egg (beaten)
  • 1 tsp fine salt
  • 4 oz soft blue cheese (mashed (suggested: St Agur))
  • 3 1/2 oz soured cream
  • 1 small garlic clove (crushed)
  • 2 small ripe avocados (halved, stoned and peeled, roughly mashed with a fork)
  • 1 lime juice
  • 1 pinch pinch of salt
  • 6 slices thick-cut streaky bacon (grilled until crisp)
  • 6 brioche burger buns (halved and toasted)
  • 3 ripe tomatoes (sliced)
  • 6 soft lettuce leaves

Instructions

  1. To make the burgers, trim and discard any sinews from the chicken, roughly chop, then pulse in a food processor until it resembles mince. Empty into a large bowl and mix in chives, mustard, honey, breadcrumbs, egg, 1 tsp fine salt and plenty of freshly ground black pepper.
  2. Divide mixture equally into 6 and shape each portion into a flattened patty about 1/2 inch (3/4 inch) thick. Arrange on a lightly greased plate, cover and chill for 1 hour to firm up.
