Greek Pasta Salad

Ingredients

  • 8 oz Orecchiette or Penne Pasta
  • 1 small Cucumber (halved lengthways, deseeded and sliced)
  • 11 oz Cherry Tomatoes (halved)
  • 3.5 oz Black Olives (pitted and halved)
  • 1 small Red Onion (finely sliced)
  • 3.5 oz Feta Cheese (crumbled)
  • 1 tbsp Wholegrain Mustard
  • 2 tbsp Runny Honey
  • 1 tsp Dried Oregano
  • 3 tbsp White Wine Vinegar
  • 5 tbsp Extra Virgin Olive Oil
  • Seasoning (such as salt and pepper)

Instructions

  1. Bring a large pan of salted water to the boil and cook the pasta according to pack instructions until al dente.
  2. Meanwhile, in a large serving bowl, mix the cucumber, tomatoes, olives and onion. In a small jug, whisk the dressing ingredients with some seasoning.
