Greek Pasta Salad
A fresh and flavorful Mediterranean-style pasta salad, perfect for suppers, picnics, or packed lunches.
Ingredients
- 8 oz Orecchiette or Penne Pasta
- 1 small Cucumber (halved lengthways, deseeded and sliced)
- 11 oz Cherry Tomatoes (halved)
- 3.5 oz Black Olives (pitted and halved)
- 1 small Red Onion (finely sliced)
- 3.5 oz Feta Cheese (crumbled)
- 1 tbsp Wholegrain Mustard
- 2 tbsp Runny Honey
- 1 tsp Dried Oregano
- 3 tbsp White Wine Vinegar
- 5 tbsp Extra Virgin Olive Oil
- Seasoning (such as salt and pepper)
Instructions
- Bring a large pan of salted water to the boil and cook the pasta according to pack instructions until al dente.
- Meanwhile, in a large serving bowl, mix the cucumber, tomatoes, olives and onion. In a small jug, whisk the dressing ingredients with some seasoning.
