Naan Pizza with Goat Cheese and Fresh Tomato Salad

Ingredients

  • 1/2 medium Red Onion (thinly sliced)
  • 2.6 oz Zucchini (approx. 1/2 small zucchini, thinly sliced)
  • 5.3 oz Sweet Potato (approx. 1 small, scrubbed and sliced into thin rounds)
  • 2 pieces Naan Bread (approx. 10.6 oz total weight)
  • 1/2 cup Tomato Sauce (Passata) (approx. 100g)
  • 3.5 oz Fresh Goat Cheese (crumbled (approx. 100g))
  • 7.1 oz Cherry Tomatoes (approx. 200g, halved)
  • 1.7 tbsp Basil Crème (approx. 25 ml)
  • 1 tsp Dried Oregano (approx. 1 packet)
  • 3 tsp White Balsamic Vinegar
  • 1 tbsp Extra Virgin Olive Oil (plus more for drizzling)
  • to taste Salt and Pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare the vegetables: thinly slice half of the red onion into rings. Finely chop the other half (for the salad later). Scrub or peel the sweet potato and cut it into very thin rounds. Using a peeler or cheese slicer, cut the zucchini into thin ribbons.
  2. In a frying pan, heat 1/2 tablespoon of olive oil per person over medium-high heat. Add the sweet potato slices and half of the dried oregano. Sauté for 4-6 minutes. In the last minute, add the zucchini ribbons to the pan and cook briefly. Season with salt and pepper to taste.
