Turkey Koftes with Couscous
Flavorful turkey patties served with a refreshing minty yogurt dip and fragrant couscous.
Ingredients
- 1 lb ground turkey
- 0.5 onion (finely chopped)
- 1 medium egg (beaten)
- 1 tsp ground allspice
- 3.5 oz dried apricots (chopped)
- 1 large bunch fresh parsley (chopped)
- 2 tbsp olive oil
- 5 oz plain thick yogurt
- 2 lemons (juice of)
- 1 large bunch fresh mint (chopped)
- 11 oz couscous
- 1.9 cups hot chicken stock
- 1 tsp ground cumin
- 1 cucumber (deseeded and finely chopped)
- 3 tomatoes (roughly chopped)
Instructions
- In a bowl, mix the mince, onion, egg, allspice, 2oz chopped apricots and 1tbsp chopped parsley. Season and shape into 8 koftes.
- Preheat a large griddle pan. Brush the koftes with oil and fry for about 5min each side until cooked through.
