Turkey Koftes with Couscous

Ingredients

  • 1 lb ground turkey
  • 0.5 onion (finely chopped)
  • 1 medium egg (beaten)
  • 1 tsp ground allspice
  • 3.5 oz dried apricots (chopped)
  • 1 large bunch fresh parsley (chopped)
  • 2 tbsp olive oil
  • 5 oz plain thick yogurt
  • 2 lemons (juice of)
  • 1 large bunch fresh mint (chopped)
  • 11 oz couscous
  • 1.9 cups hot chicken stock
  • 1 tsp ground cumin
  • 1 cucumber (deseeded and finely chopped)
  • 3 tomatoes (roughly chopped)

Instructions

  1. In a bowl, mix the mince, onion, egg, allspice, 2oz chopped apricots and 1tbsp chopped parsley. Season and shape into 8 koftes.
  2. Preheat a large griddle pan. Brush the koftes with oil and fry for about 5min each side until cooked through.
